Melt in the mouth kale salad

Here’s one of my favourite salads to make. l love making this one either as a side dish or as a complete meal with roasted chickpeas, grilled chicken or salmon.

It truly is my go-to when I haven’t got a lot of time and I’m in need of an extra nutrient hit!

What’s great about this one is the kale is prepared in advance and can be pulled out of the fridge when you’re ready to serve lunch or dinner, AND you can use whatever toppings you have hanging around in your pantry.

Nuts, seeds, feta instead of the parmesan, avocado and even some fresh seasonal fruit as a tasty addition. Change up the ingredients to satisfy your taste buds:)

Ingredients

Serves: 4 as a main dish

  • 2 bunches of kale (stems removed, rinsed and dried)

  • 2 tbsp extra virgin olive oil

  • 2 tsp local honey

  • Juice of 1 lemon

  • Salt & pepper to taste

  • 1/4 cup pumpkin seeds

  • 1/4 cup pomegranate seeds

  • 3 ozs sliced cooked chicken breast OR 2 cups of roasted chickpeas

  • 4 tbsp grated fresh parmesan

Directions

  1. Chop the kale into thin slices and place into a large bowl.

  2. Make the salad dressing by combining the h

  3. oney, olive oil, salt and pepper into a small bowl and whisk together.

  4. Pour the salad dressing over the kale and mix very well. Cover and store in the fridge for approx an hour before serving.

  5. It can be stored in an airtight container in the fridge for up to two days.

  6. Add the remaining ingredients when you’re ready to serve it up.

Top tips if you’re not a kale lover…

By removing the tough stems and allowing the kale to marinate in the salad dressing for approx 1 hour before serving is going to help reduce the bitterness.
