healthy banana chocolate chip muffins

OH MY GOODNESS, I’m super excited to share this recipe with you. They’re the best Chocolate Chip Banana Muffins I’ve ever made. These tasty little gems satisfied my taste buds in every way possible, and, they’re bursting with flavour. To make them even better, the sweetness is PERFECT.

A big BONUS with this recipe is that you’ll only have one dirty bowl to wash up afterwards because you’re going to throw everything in together.

I really did up my game with the chocolate chips to make them such an “ooey gooey” mess, but that’s what made them SOOOOO good.

Let’s get straight into the recipe!

Healthy Chocolate Chip Banana Muffins

Ingredients

Makes 12 muffins

1 Egg (large)

3 Banana (very ripe)

1/2 cup Unsweetened Applesauce

1 tsp Maple Syrup (or honey)

3 tbsp Avocado Oil (or olive, coconut oil)

2 tsp Vanilla Extract

1 tsp Baking Powder

1/2 tsp Baking Soda

1 1/3 cups Whole Wheat Flour (or spelt)

3/4 cup Organic Dark Chocolate Chips (reduce if needed)

 

Healthy Chocolate Chip Banana Muffins Recipe

Directions

  1. Preheat the oven to 375° F and place paper liners into a 12 muffin tray

  2. In a large mixing bowl, place the egg, 3 very ripe bananas, applesauce, maple syrup, oil, vanilla, baking powder and baking soda. Beat well to combine everything

  3. Add in the whole wheat flour and mix together. Don’t over mix otherwise the muffins will become a little tough. Stir in the dark chocolate chips.

  4. Fill each paper liner with 1/4 cup of the mixture and bake in the preheated oven for 22-25 minutes

  5. Test by inserting a toothpick into the centre of a muffin. When it comes out clean, they’re fully cooked

  6. Allow to cool on a cooling rack then enjoy with your favourite drink

You can add 1/3 cup of walnuts to add in omega-s’s, more protein and fibre!

Each muffin will provide you with 206 calories, 4g protein, 3g fibre.
